STATERS & SNAKES
Healthy and low-fat starters provide a delicious start
to a meal and are quick and easy to make. Starters should not be too filling as
they are simply setting the scene for the low-fat main course to follow. Choose
from attempting selection of recipes, including light and refreshing fruit
cocktails such as Minted Melon and Grapefruit and vegetable pates or dips such
as Guacamole with Crudites.
Quick and easy snacks and light dishes are ideal
served with thick slices of warm, crusty bread for a low fat, nutritious lunch
or supper. We include a selection of tasty snacks, such as Pasta with Herby
Scallops, Cheese and Chutney Toasties and Parma Ham and Pepper Pizzas.
MELON, PINEAPPLE
AND GRAPE COCKTAIL
A light, refreshing fruit salad,
with no added sugar
and virtually no fat,
prefect for breakfast
or brunch or any time.
INGREDIENTS
Serves 4
½ melon
225g/8oz fresh
pineapple or 225g/8oz can pineapple chunks in own juice
225g/8oz seedless
white grapes,
Halved 125ml/4fl
oz/1/2 cup white grape juice fresh mint leaves to
decorate
STEP 1
Remove the seeds from the melon half and use a melon baller to scoop out even
size balls.
STEP 2
Using
a sharp knife, cut the skin from the pineapple and discard, Cut the fruit into
bite – size chunks.
STEP 3
Combine all the fruits in a glass serving dish and pour over the juice. If you
are using canned pineapple, measure the drained juice and make it up to the
required quantity with the grape juice.
STEP 4
If
not serving immediately, cover and chill, serve decorated with mint leaves, if
liked.
